Cookie Dough:
1 cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
¼ cup cocoa powder (for chocolate version)
½ tsp baking powder
¼ tsp salt
Ganache Filling:
6 oz semi-sweet or dark chocolate, chopped
½ cup heavy cream
1 tbsp unsalted butter (optional)
Toppings (optional):
Valentine sprinkles
Melted white chocolate
Powdered sugar
Instructions
Cream butter and sugar. Add egg and vanilla, mix well.
Mix dry ingredients separately, then combine with wet.
Chill dough 30–60 minutes. Preheat oven to 350°F.
Roll dough ¼ inch thick, cut with heart-shaped cutters.
Bake 8–10 minutes. Cool completely.
Heat cream and pour over chocolate. Let sit 1–2 mins, stir until smooth.
Spread or pipe ganache onto one cookie, sandwich with another.
Decorate with sprinkles or drizzle if desired.
Notes
For best results, use high-quality chocolate.
Chill dough if it becomes too soft to handle.
Store in airtight container at room temp for 3–4 days.
