Date Cookies with Olives & Thyme are soft, chewy cookies with natural sweetness from dates, nutty flavor from pecans, a hint of olives, and aromatic thyme.

Ingredients

1 cup unsalted butter, room temperature
1/2 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup pitted dates, chopped
1/4 cup green or black olives, finely chopped
1 tablespoon fresh thyme leaves
Optional: pinch of cinnamon or honey drizzle

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. Whisk together flour, baking soda, and salt; fold into wet ingredients.
  5. Fold in dates, olives, and thyme. Optional: cinnamon.
  6. Scoop dough onto sheets and flatten slightly.
  7. Bake 12–14 minutes until edges are lightly golden.
  8. Cool 5 minutes on sheet, then transfer to wire rack. Optional: drizzle honey.
  9. Store in airtight container up to 5 days.

Notes

Toast pecans if adding. Use finely chopped dates and olives for even texture. Chill dough to prevent spreading.
