Brown Butter Bourbon Pecan Chocolate Cookies are rich, nutty, and chocolaty with a warming bourbon flavor, perfect for cozy treats.

1 cup unsalted butter
1 1/2 cups brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 tablespoons bourbon
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups pecans, toasted and chopped
1 1 1/2 cups semi-sweet chocolate chunks

Instructions

  1. Brown the butter over medium heat until golden and nutty, then cool slightly.
  2. Preheat oven to 350°F and line baking sheets with parchment.
  3. Cream browned butter with sugars until smooth.
  4. Beat in eggs, vanilla, and bourbon.
  5. Fold in flour, baking soda, and salt until just combined.
  6. Gently fold in toasted pecans and chocolate chunks.
  7. Scoop tablespoons of dough onto sheets, flatten slightly.
  8. Bake 12–14 minutes until edges are lightly golden and centers soft.
  9. Cool 5 minutes on sheet, then transfer to wire rack.
  10. Store in airtight container up to 5 days.

Notes

Toast pecans for extra flavor. Sprinkle sea salt for contrast. Chill dough to prevent spreading.
