A creamy, tangy pasta salad packed with dill pickles, crispy bacon, and fresh herbs, perfect for gatherings or make-ahead meals.

Ingredients

12 ounces rotini pasta
8 slices bacon
1 1/2 cups dill pickles, finely chopped
1/3 cup pickle juice
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 cup shredded cheddar cheese
1/3 cup chopped red onion
1/2 cup chopped celery
2 tablespoons fresh dill

Instructions

  1. Cook pasta in salted boiling water until al dente, then drain and cool.
  2. Cook bacon until crisp, drain, and chop into pieces.
  3. In a bowl, mix mayonnaise, sour cream, mustard, pickle juice, and seasonings.
  4. Add cooled pasta and toss to coat evenly.
  5. Stir in pickles, bacon, cheese, onion, celery, and dill.
  6. Chill for at least one hour before serving.
  7. Stir and adjust with extra dressing or pickle juice if needed.

 

Notes

Chilling improves flavor and texture.
Adjust pickle quantity for stronger or milder taste.
Best served cold.
