This one-pan cheesy ground beef and potato casserole is a hearty, comforting dinner loaded with savory beef, tender potatoes, and bubbling cheddar cheese.

1 lb ground beef
5 medium potatoes, thinly sliced
1 small onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom or cheddar soup (or homemade)
1 cup milk or broth
2 cups shredded cheddar cheese
1 tsp salt
½ tsp black pepper
½ tsp paprika
Optional: chopped parsley or green onions for garnish
Instructions
Preheat oven to 375°F. Lightly grease a 9×13 baking dish or oven-safe skillet.
Brown ground beef in a skillet. Drain fat. Add onion and garlic; cook until soft.
Stir in soup and milk/broth. Season with salt, pepper, and paprika.
Layer half the potatoes in the dish, then half the beef mixture, and half the cheese.
Repeat layers. Cover with foil and bake for 45 minutes.
Remove foil, bake another 15–20 minutes until bubbly and golden.
Let rest 10 minutes before serving. Garnish if desired.
