Brownie Mix Cookies from Salt & Baker with a fudgy, chewy center and slightly crisp edges, made quickly using a boxed brownie mix.

Ingredients

1 box brownie mix (1820 oz)
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips or chunks (optional)
1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Combine brownie mix, butter, eggs, and vanilla to form dough.
  3. Fold in chocolate chips or nuts if desired.
  4. Scoop dough into balls and place on baking sheet 2 inches apart.
  5. Bake 10–12 minutes until edges set and centers soft.
  6. Cool 5 minutes on sheet, then transfer to wire rack.

Notes

Slightly underbake for extra fudginess. Optional: add nuts, caramel, or white chocolate.
