Masala Macaroni is a spicy, cheese-free Indian pasta dish where elbow macaroni is tossed in a bold tomato-onion masala seasoned with classic Indian spices.

1½ cups elbow macaroni
2 tbsp oil
½ tsp cumin seeds
1 medium onion, finely chopped
1 tsp ginger-garlic paste
2 green chilies, chopped
2 medium tomatoes, chopped
½ tsp red chili powder
1 tsp coriander powder
¼ tsp turmeric powder
½ tsp garam masala
Salt, to taste
½ cup chopped bell pepper (optional)
¼ cup green peas or corn (optional)
Fresh cilantro, for garnish
Lemon juice, to taste
Crushed kasuri methi (optional)
Instructions
Cook pasta in salted water until al dente. Drain and set aside.
Heat oil, add cumin seeds. Once sizzling, sauté onions until golden.
Add ginger-garlic paste and green chilies. Cook for 1–2 mins.
Add tomatoes and cook until soft and oil separates.
Stir in turmeric, red chili, coriander powder, and salt.
Add bell peppers, corn, or peas. Cook for 2–3 mins.
Add pasta, garam masala, and kasuri methi. Mix well.
Finish with lemon juice and garnish with cilantro. Serve hot.
Notes
Adjust spice levels based on taste.
Use any short pasta shape.
Add protein like tofu or chickpeas to make it a complete meal.
