A cheesy, crispy homemade version of the fast-food grilled cheese burrito, filled with seasoned beef, rice, sauces, and grilled cheese crust.

Ingredients

  • 4 large flour tortillas
  • 1 lb ground beef (or plant-based substitute)
  • 23 tbsp taco seasoning
  • 2 cups cooked rice
  • ½ cup nacho cheese sauce
  • ½ cup sour cream
  • ¼ cup chipotle sauce
  • 1½ cups shredded cheddar and Monterey Jack cheese
  • Optional: crushed tortilla chips, black beans

Instructions

  1. Brown beef and season with taco mix. Prepare chipotle sauce and warm nacho cheese.
  2. Layer tortilla with nacho cheese, rice, beef, sauces, and cheese.
  3. Roll into burrito. Repeat for all tortillas.
  4. Sprinkle shredded cheese in a hot skillet, place burrito seam-side down on cheese.
  5. Cook until golden and crisp. Flip and toast the top.
  6. Rest briefly, slice, and serve hot with your favorite dips.

Notes

  • Vegetarian option: Use beans or lentils.
  • For meal prep, assemble and refrigerate before grilling.
  • Freeze for up to 2 months, then thaw and reheat.
