2 tbsp olive oil
1 tbsp butter
1/2 onion, diced
3 cloves garlic, minced
2 tbsp tomato paste
1 can (14 oz) crushed tomatoes
2 1/2 cups vegetable or chicken broth
12 oz penne or rotini pasta
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/2 cup heavy cream
1/2 cup grated Parmesan
Salt and pepper, to taste
Fresh basil, for garnish
Instructions
In a large pot, sauté onion in olive oil and butter until soft. Add garlic; cook 30 seconds.
Stir in tomato paste and cook 1 minute. Add crushed tomatoes, broth, pasta, seasoning, and red pepper flakes.
Bring to a boil, then reduce heat, cover, and simmer for 12–14 minutes, stirring occasionally.
Stir in cream and Parmesan. Cook 2–3 minutes until thick and creamy.
Season to taste, garnish with basil, and serve hot.
Notes
Add spinach, peas, or cooked chicken for variety.
Use half-and-half or plant-based cream as desired.
Reheat with a splash of broth to loosen the sauce.
