A quick, flavorful Garlic Broccoli Stir Fry with Chickpeas tossed in a garlicky, savory sauce. Vegan, gluten-free, and perfect for busy nights or plant-based meal prep.

Ingredients

3 cups broccoli florets
1 can chickpeas (15 oz), drained and rinsed
2 tbsp oil (avocado or olive)
34 garlic cloves, minced
1 tsp grated ginger (optional)
3 tbsp soy sauce or tamari
1 tbsp maple syrup or coconut sugar
1 tbsp rice vinegar or lime juice
1/2 tsp sesame oil
1 tsp cornstarch or arrowroot (optional)
1 tbsp water
Salt and pepper, to taste
Optional: sesame seeds, green onions, red pepper flakes

Instructions

  1. Mix sauce ingredients in small bowl and set aside.
  2. Heat 1 tbsp oil in skillet over medium heat. Add chickpeas and sauté 5–7 min until golden. Remove and set aside.
  3. Add another tbsp oil and broccoli. Stir-fry 4–5 min until just tender.
  4. Add garlic (and ginger if using), sauté 30 sec.
  5. Return chickpeas to pan. Pour in sauce and toss to coat. Cook 1–2 min until thickened.
  6. Serve over rice or quinoa with toppings of choice.

Notes

Use frozen broccoli if needed.
Double sauce for extra drizzle.
Great for meal prep—stores up to 4 days.
