Easy Street Corn Chicken Rice Bowls combine grilled chicken, charred corn, rice, and a light yogurt-lime sauce for a balanced and healthy meal.

2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1 teaspoon salt divided
1/2 teaspoon black pepper
2 cups cooked brown or jasmine rice
1 1/2 cups corn kernels
1/2 cup plain Greek yogurt
1 tablespoon lime juice
1/2 teaspoon smoked paprika
1/4 cup red onion finely diced
1/4 cup chopped cilantro
1 avocado sliced

Instructions

  1. Cook rice and set aside.
  2. Season chicken with oil and spices.
  3. Grill or sauté chicken until fully cooked and slice.
  4. Char corn in skillet until lightly browned.
  5. Mix corn with yogurt, lime juice, paprika, onion, and cilantro.
  6. Divide rice into bowls.
  7. Top with chicken and street corn mixture.
  8. Add avocado and serve.
