Crispy sourdough bread layered with gooey cheese and aromatic basil pesto, creating a vibrant, flavorful grilled cheese.

Ingredients

2 slices rustic sourdough bread
2 tablespoons unsalted butter, softened
3 tablespoons basil pesto
1/2 cup shredded mozzarella cheese
1/4 cup shredded provolone cheese
2 tablespoons grated Parmesan cheese
Optional: 2–3 thin tomato slices
Optional: 1 tablespoon caramelized onions
Pinch of salt
Pinch of black pepper

Instructions

  1. Spread butter on one side of each bread slice.
  2. Spread pesto on the unbuttered side of one slice.
  3. Layer mozzarella, provolone, and Parmesan on top of pesto. Add optional tomato or onions. Season with salt and pepper.
  4. Heat a skillet over medium heat. Place sandwich buttered side down.
  5. Cook 3–4 minutes per side until golden and cheese is melted. Press lightly with a spatula.
  6. Remove from skillet and rest for 1 minute. Slice diagonally.

Notes

Use medium heat to prevent burning; balance toppings to avoid soggy bread; experiment with cheese combinations or pesto variations.
