2 cups cooked, shredded chicken
1½ cups shredded cheddar cheese
1½ cups shredded Monterey Jack cheese
4 large flour tortillas
1 tsp ground cumin
1 tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
12 tbsp butter or oil for cooking

Instructions

  1. In a bowl, toss shredded chicken with cumin, smoked paprika, salt, and pepper.
  2. Lay a tortilla flat and spread a layer of cheese on one half.
  3. Add a portion of seasoned chicken, then more cheese.
  4. Fold tortilla in half over the filling.
  5. Heat skillet over medium heat with a little butter or oil.
  6. Cook quesadilla for 2–3 minutes per side until golden and crisp.
  7. Remove, let rest 1 minute, then slice into wedges.
  8. Repeat with remaining ingredients.

Notes
