Ingredients

12 oz pasta (penne or fettuccine)
1½ lbs chicken breast or thighs, sliced
2 tbsp Cajun seasoning
2 tbsp olive oil or butter
1 small onion, diced
2 bell peppers, sliced
3–4 garlic cloves, minced
1½ cups heavy cream
½ cup grated Parmesan
Salt & pepper to taste
½ cup reserved pasta water
Fresh parsley or green onions (for garnish)
Instructions
Cook pasta in salted water until al dente. Reserve water and drain.
Toss chicken with Cajun seasoning. Sear in butter/oil until golden and cooked through. Set aside.
Sauté onion and bell peppers in same pan. Add garlic; cook 30 sec.
Pour in cream, simmer, and stir in Parmesan. Season to taste.
Add chicken and pasta back to pan. Toss to coat. Loosen with pasta water if needed.
Garnish and serve hot.
Notes
Use shrimp or mushrooms as an alternative protein.
Add red pepper flakes or hot sauce for more heat.
