1 cup mashed cooked sweet potato
1 cup all-purpose flour
2 large eggs
3/4 cup milk
1 tablespoon sugar (optional)
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
2 tablespoons melted butter or oil
2 tablespoons oil or butter for cooking

Instructions

  1. Mash cooked sweet potatoes until smooth.
  2. Mix sweet potato with eggs, milk, butter, sugar, and vanilla.
  3. In another bowl, combine flour, baking powder, cinnamon, and salt.
  4. Stir dry ingredients into wet mixture to form a batter.
  5. Heat a skillet over medium heat and grease lightly.
  6. Pour batter onto skillet and cook 3–4 minutes until bubbles form.
  7. Flip and cook another 2–3 minutes until golden.
  8. Repeat with remaining batter and serve warm.

Notes

Do not overmix batter to maintain fluffiness.
