This French Onion Pasta combines caramelized onions, garlic, thyme, and a creamy, savory sauce tossed with pasta for a comforting and elegant dish — with or without cheese.

 

Ingredients

  • 8 oz pasta (fettuccine, rigatoni, etc.)
  • 3 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 cup vegetable or mushroom broth
  • 1/2 cup heavy cream or plant-based cream
  • 2 tbsp butter or olive oil
  • Salt and black pepper, to taste
  • Optional: 1/2 cup shredded cheese (Gruyère, vegan mozzarella, etc.)

Instructions

  1. In a large skillet, heat butter/oil over medium-low. Add onions and cook 30–40 minutes until deeply golden, stirring often.
  2. Add garlic and thyme. Cook 1 minute. Deglaze with wine (optional).
  3. Add broth and simmer 3–5 minutes. Stir in cream and reduce slightly.
  4. Cook pasta until al dente. Reserve 1/2 cup water, then drain.
  5. Toss pasta into sauce with cheese (if using). Add pasta water to adjust.
  6. Serve warm with herbs or broil briefly for a cheesy top.

Notes

  • Vegan version: Use olive oil, plant-based cream, and vegan cheese.
  • Add protein or greens to customize.
  • Make sauce ahead and store for 3 days.
