A quick and refreshing cucumber salad with fresh mozzarella, basil, olive oil, and optional balsamic glaze, perfect for light meals or sides.
2 medium cucumbers, thinly sliced
8 ounces fresh mozzarella, sliced or mini mozzarella balls
1/4 cup fresh basil leaves, torn
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic glaze (optional)
Salt, to taste
Freshly cracked black pepper, to taste
Optional: cherry tomatoes, halved, or toasted pine nuts
1. Slice cucumbers and arrange on a serving dish.
2. Add mozzarella and optional cherry tomatoes.
3. Sprinkle fresh basil leaves over the top.
4. Drizzle with olive oil and optional balsamic glaze.
5. Season with salt and pepper; serve immediately.
