Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter, divided

  • 4 garlic cloves, minced

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt and black pepper, to taste

  • 12 oz pasta (penne, rotini, or fettuccine)

  • 1 cup heavy cream

  • ¾ cup grated Parmesan cheese

  • ½ cup reserved pasta water

  • Optional: chopped parsley or basil for garnish

Instructions

  • Cook pasta in salted water until al dente. Reserve ½ cup pasta water and drain.

  • Season chicken with salt, pepper, paprika, and Italian seasoning.

  • In a skillet, heat olive oil and 1 tbsp butter. Sear chicken bites until golden and cooked through, about 6–8 minutes. Remove and set aside.

  • In the same pan, melt remaining butter and sauté garlic for 1 minute.

  • Add cream and bring to a simmer. Stir in Parmesan and let thicken 3–5 minutes.

  • Return chicken and pasta to the pan. Toss to coat. Use pasta water to adjust consistency.

  • Garnish with parsley and serve warm.

Notes

  • Add spinach or mushrooms for variation

  • Use half-and-half or milk for a lighter sauce

  • Store leftovers in fridge up to 3 days
