1.5 lbs boneless, skinless chicken breast or thighs, cut into bite-sized pieces
1 tbsp olive oil
3 tbsp unsalted butter
4–5 garlic cloves, minced
8 oz pasta (fettuccine, penne, or rigatoni)
1 cup heavy cream
½ cup freshly grated Parmesan cheese
1 tsp Italian seasoning
Salt & black pepper, to taste
Fresh parsley (for garnish)
Reserved pasta water
Cook pasta until al dente. Reserve ½ cup pasta water and drain.
Season chicken with salt, pepper, and Italian seasoning.
In a skillet, heat olive oil. Sear chicken in batches until golden and cooked through. Set aside.
Add butter to the skillet. Sauté garlic until fragrant, about 1–2 minutes.
Stir in cream and bring to a simmer. Add Parmesan and stir until melted.
Return chicken to skillet, add pasta, and toss to coat. Add pasta water if needed.
Garnish with parsley and serve hot.
Add spinach or mushrooms for variation.
Use half-and-half for a lighter sauce.
Store leftovers up to 3 days in fridge.
