Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast or thighs, cut into bite-sized pieces

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 45 garlic cloves, minced

  • 8 oz pasta (fettuccine, penne, or rigatoni)

  • 1 cup heavy cream

  • ½ cup freshly grated Parmesan cheese

  • 1 tsp Italian seasoning

  • Salt & black pepper, to taste

  • Fresh parsley (for garnish)

  • Reserved pasta water

Instructions

  • Cook pasta until al dente. Reserve ½ cup pasta water and drain.

  • Season chicken with salt, pepper, and Italian seasoning.

  • In a skillet, heat olive oil. Sear chicken in batches until golden and cooked through. Set aside.

  • Add butter to the skillet. Sauté garlic until fragrant, about 1–2 minutes.

  • Stir in cream and bring to a simmer. Add Parmesan and stir until melted.

  • Return chicken to skillet, add pasta, and toss to coat. Add pasta water if needed.

  • Garnish with parsley and serve hot.

Notes

  • Add spinach or mushrooms for variation.

  • Use half-and-half for a lighter sauce.

  • Store leftovers up to 3 days in fridge.
