Crock Pot Garlic Butter Chicken with Potatoes and Carrots is a hearty slow cooker meal featuring tender chicken, soft potatoes, and sweet carrots cooked in a rich garlic butter broth.
1½ pounds boneless chicken thighs or breasts
1 pound baby potatoes, halved
3 carrots, sliced
4 cloves garlic, minced
3 tablespoons butter, melted
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
½ teaspoon oregano
¾ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil (optional)
1. Wash and cut potatoes and carrots.
2. Place potatoes and carrots in the bottom of the crock pot.
3. Season chicken with salt, pepper, thyme, and oregano.
4. Brown chicken in olive oil for 2–3 minutes per side if desired.
5. Place chicken on top of the vegetables in the crock pot.
6. Mix melted butter with garlic and parsley and pour over the chicken.
7. Add chicken broth around the vegetables.
8. Cover and cook on low for 6–7 hours or high for 3–4 hours.
9. Check vegetables for tenderness and adjust seasoning if needed.
10. Serve chicken with potatoes and carrots and spoon garlic butter sauce over the top.
