  • 8 oz spaghetti or pasta of choice
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 56 garlic cloves, minced or thinly sliced
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan (optional)
  • Salt & freshly ground black pepper, to taste
  • 2 tbsp chopped parsley
  • Red pepper flakes (optional)

Instructions

  1. Cook pasta until al dente. Reserve ½ cup pasta water and drain.
  2. In a skillet, melt butter and olive oil. Sauté garlic on low until fragrant and golden.
  3. Add pasta water and simmer briefly.
  4. Toss in pasta, Parmesan, and pepper. Stir until glossy and coated.
  5. Garnish with parsley and red pepper flakes. Serve hot.

Notes

For added flavor, stir in lemon zest or top with sautéed shrimp or mushrooms. Use vegan butter and dairy-free cheese for a plant-based option.
