Sweet, juicy blueberries paired with melted Brie or cream cheese, sandwiched between buttery, crispy bread for a gourmet twist on classic grilled cheese.

Ingredients

4 slices sourdough or brioche bread
1 cup fresh blueberries
2 teaspoons honey
1/2 teaspoon lemon zest
4 ounces Brie or cream cheese, sliced or spread
2 tablespoons butter, softened
1 teaspoon fresh thyme leaves (optional)
Pinch of salt

Instructions

  1. Toss blueberries with honey, lemon zest, and salt; let sit 5–10 minutes.
  2. Spread cheese on two slices of bread; top with blueberries and thyme. Close sandwiches.
  3. Butter the outside of each sandwich.
  4. Grill over medium heat 3–4 minutes per side until golden and cheese melts.
  5. Let rest 1–2 minutes, then cut diagonally and serve warm.

Notes

Add fig jam or drizzle of maple syrup for extra sweetness. Use brioche or sourdough for best flavor. Plant-based cheese can substitute for dairy-free versions.
