1 1/2 pounds chicken breast or thighs, cubed
2 tablespoons olive oil
1 tablespoon lemon juice
3 cloves garlic, minced
2 tablespoons ranch seasoning
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped

Instructions

  1. Cut chicken into even pieces and pat dry.
  2. Mix olive oil, lemon juice, garlic, ranch seasoning, parmesan, and spices.
  3. Toss chicken in marinade and refrigerate for 30 minutes.
  4. Thread chicken onto skewers.
  5. Preheat grill to medium-high heat.
  6. Grill skewers for 10–12 minutes, turning occasionally.
  7. Cook until internal temperature reaches 165°F.
  8. Rest briefly and garnish with parsley before serving.

Notes

Soak wooden skewers before grilling.
Do not overcrowd skewers to allow even cooking.
