Ground Beef & Potatoes: A Simple Skillet Dinner

A hearty one-skillet meal with golden potatoes, seasoned ground beef, and cozy flavors—ready in about 35 minutes. Perfect for weeknights or meal prep.

Ingredients

1 lb lean ground beef
3 medium russet potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper, to taste
12 tbsp olive oil
Optional: Worcestershire sauce, chopped parsley, shredded cheese

Instructions

  1. Peel and dice potatoes into ½-inch cubes. Soak in cold water for 10 minutes, then drain and pat dry.
  2. Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook undisturbed for 5 minutes, then stir occasionally for 10 more minutes until golden and tender. Remove and set aside.
  3. In the same skillet, cook ground beef for 6–8 minutes, breaking it up until browned. Drain excess fat if needed.
  4. Add diced onion and cook 3–4 minutes. Stir in garlic and cook another 30 seconds.
  5. Season with paprika, Italian seasoning, salt, and pepper.
  6. Return potatoes to the skillet. Stir gently and cook 3–5 minutes to combine.
  7. Optional: Add a splash of Worcestershire sauce or sprinkle fresh parsley before serving.

Notes

Try sweet potatoes or ground turkey for a lighter version. Add cheese or hot sauce for extra flavor.
