An easy and healthy slow cooker chicken recipe perfect for busy weeknights. Tender, flavorful, and customizable with your favorite veggies and spices.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped parsley (for garnish)
  • Optional: ½ cup plain Greek yogurt or light cream cheese (for creamy version)

Instructions

  1. Place carrots, celery, onions, and bell pepper at the bottom of the crockpot.
  2. Lay chicken on top and sprinkle with thyme, paprika, salt, and pepper.
  3. Add minced garlic and pour in chicken broth.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  5. Shred chicken in the pot or remove and chop, then return to the sauce.
  6. Stir in optional Greek yogurt or cream cheese for a creamy texture.
  7. Garnish with parsley and serve over rice, quinoa, or greens.

Notes

  • Add 1–2 tbsp lemon juice at the end for brightness.
  • Store leftovers in the fridge for 4 days or freeze for 3 months.
  • Swap chicken with chickpeas for a vegetarian version.
