Easy Gluten Free Breakfast Bars are soft, chewy bars made with gluten-free oats, nut butter, eggs, and natural sweeteners, baked into a convenient grab-and-go breakfast or snack.

Ingredients

2 cups certified gluten-free rolled oats
1/2 cup almond butter or peanut butter
2 large eggs
1/3 cup maple syrup or honey
1/2 cup milk or dairy-free milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup dried fruit
1/4 cup chopped nuts or seeds (optional)
1/4 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Mix nut butter and maple syrup until smooth.
  3. Add eggs, milk, and vanilla; mix well.
  4. Combine oats, baking powder, cinnamon, and salt in a separate bowl.
  5. Stir dry ingredients into wet mixture until combined.
  6. Fold in dried fruit and optional add-ins.
  7. Spread mixture into the pan evenly.
  8. Bake 25–30 minutes until set and lightly golden.
  9. Cool completely before slicing into bars.

Notes

Allow bars to cool fully for clean slicing.
Adjust liquid or oats if batter consistency needs correction.
