Ingredients

2 cups broccoli, chopped
1 zucchini, chopped

2 garlic cloves, minced
1 tsp fresh ginger, grated
5 oz chicken breast or tofu
¼ cup vegetable broth
2 tbsp low-sodium soy sauce or coconut aminos
1 tbsp rice vinegar
Chili flakes (optional)
1½ cups cauliflower rice or shredded cabbage

Instructions

  1. Sear chicken or tofu in a skillet until browned and cooked. Set aside.
  2. Stir-fry veggies in broth over medium heat for 5–7 minutes until tender-crisp.
  3. Add garlic and ginger. Cook 1 minute more.
  4. Return protein to pan and add soy sauce, vinegar, and chili flakes.
  5. Serve hot over cauliflower rice or cabbage.
