Healthy-ish Lazy Dinner with Chicken and Noodles

Sticky garlic chicken noodles are an easy, one-pan dinner with tender chicken, savory garlic sauce, and chewy noodles. Sweet, salty, and done in 20 minutes.

Ingredients

1 lb boneless chicken thighs or breasts, sliced
1 tbsp cornstarch
1 tbsp neutral oil
4–5 garlic cloves, minced
8 oz noodles (lo mein, ramen, or rice noodles)
ΒΌ cup soy sauce
2 tbsp oyster or hoisin sauce
1 tbsp brown sugar or honey
1 tbsp rice vinegar (optional)
3 tbsp water
1 tsp cornstarch (for sauce)
1 tsp sesame oil
Chopped green onions & sesame seeds (for garnish)

Instructions

  1. Toss chicken with cornstarch and a pinch of salt.
  2. Cook chicken in hot skillet with oil for 5–6 minutes. Set aside.
  3. Whisk together sauce ingredients in a bowl.
  4. Cook noodles according to package directions and drain.
  5. Add sauce to skillet, simmer until thickened. Return chicken to pan.
  6. Toss in noodles and mix until well coated.
  7. Finish with sesame oil, green onions, and sesame seeds.

Notes

Add vegetables if desired. Use gluten-free noodles and tamari for GF version. Store leftovers up to 4 days.
