Low-Calorie Air Fryer Eggplant is a simple, crispy, and healthy dish made with tender eggplant slices, light seasoning, and minimal oil. Perfect as a snack, side, or appetizer.

1 large eggplant, sliced into 1/2-inch thick rounds or strips
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 teaspoon dried oregano or thyme
Optional: 1 tablespoon grated Parmesan cheese
Optional: pinch of red chili flakes

Instructions

  1. Preheat air fryer to 375°F. Slice eggplant into 1/2-inch thick rounds or strips.
  2. Brush both sides with olive oil and season with garlic powder, paprika, salt, and black pepper. Add optional herbs or cheese.
  3. Place slices in a single layer in the air fryer basket. Cook 12–15 minutes, flipping halfway, until golden and crispy.
  4. Serve immediately, garnished with parsley, lemon, or balsamic glaze if desired.

Notes

Salting the eggplant removes moisture and prevents sogginess. Avoid overcrowding the basket for even crisping.
