Ingredients

200g penne or fusilli pasta
2½ cups fresh spinach (or 1 cup frozen)
1 tbsp butter or olive oil
3 garlic cloves, chopped
1 small onion, finely chopped
½ cup shredded cheese (cheddar or mozzarella)
½ cup milk
Salt & pepper to taste
¼ tsp chili flakes (optional)
¼ tsp mixed herbs or oregano
Instructions
Cook pasta and set aside.
Blanch spinach, rinse with cold water, and blend with ¼ cup milk.
Sauté garlic and onions in butter until soft.
Add spinach puree, season, and simmer 2–3 minutes.
Stir in cheese and remaining milk until melted.
Toss in pasta and combine well. Serve hot.
Notes
Add paneer or grilled chicken for protein.
Use plant-based milk and cheese for vegan version.
