Healthy Roasted Potatoes and Carrots with Crispy Edges is a simple oven-roasted side dish with naturally sweet carrots and golden potatoes.

1 pound potatoes, cubed
1 pound carrots, sliced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 425°F.
  2. Toss potatoes and carrots with olive oil and seasonings in a bowl.
  3. Spread evenly on a baking sheet.
  4. Roast for 30–35 minutes, turning halfway through.
