Energizing Savory Red Lentil Pancakes are protein-rich, plant-based pancakes made from blended soaked red lentils and simple seasonings, cooked until golden and tender.

Ingredients

1 cup red lentils, rinsed and soaked for 2 to 4 hours
1/2 to 3/4 cup water
2 cloves garlic, minced
1/4 cup onion, finely chopped
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1/4 teaspoon chili flakes (optional)
2 tablespoons chopped fresh cilantro or parsley
2 tablespoons olive oil or cooking oil
Optional: 1/4 cup grated carrot or diced bell pepper

Instructions

  1. Rinse and soak red lentils for 2 to 4 hours, then drain.
  2. Add lentils, water, garlic, onion, and seasonings to a blender.
  3. Blend until smooth, adjusting water as needed for a pourable batter.
  4. Stir in herbs and any optional vegetables.
  5. Heat a skillet with a small amount of oil over medium heat.
  6. Pour batter into the pan and spread into a round pancake.
  7. Cook 3 to 4 minutes per side until golden and cooked through.
