Juicy, protein-packed Chicken Zucchini Poppers made with lean ground chicken and fresh zucchini. Grain-free, gluten-free, and perfect for meal prep or snacking.

Ingredients

1 lb ground chicken
1 medium zucchini, grated and drained
1 egg
2 green onions, chopped
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
Pinch red pepper flakes (optional)
2 tbsp almond flour (optional)
1 tbsp avocado oil (for stovetop only)

Instructions

  1. Grate and squeeze zucchini to remove moisture.
  2. Mix all ingredients in a bowl until combined.
  3. Form into 1–2 tbsp-sized poppers.
  4. Bake at 400°F for 18–20 min, air fry at 375°F for 10–12 min, or pan-fry 3–4 min per side.
  5. Let cool slightly and serve with your favorite dip.

Notes

Use flax egg for egg-free version.
Freeze raw or cooked for future meals.
Add shredded carrots or herbs for variety.
