This easy spinach mushroom pasta is a quick, comforting vegetarian dinner made with sautéed garlic mushrooms, fresh spinach, and a creamy Parmesan sauce. Ready in under 30 minutes!

Ingredients

  • 12 oz pasta (fettuccine or linguine)
  • 10 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp butter
  • ¾ cup heavy cream or half-and-half
  • ½ cup grated Parmesan
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Optional: red pepper flakes, lemon zest, parsley

Instructions

  1. Cook pasta in salted water until al dente. Reserve ½ cup water.
  2. Sauté onion in olive oil and butter. Add garlic and mushrooms, cook until golden.
  3. Stir in spinach and cook until wilted.
  4. Add cream, seasonings, and Parmesan. Simmer until thickened.
  5. Toss in pasta and reserved water as needed.
  6. Serve with extra cheese and herbs.
