A creamy, low-carb Alfredo pasta made with zucchini noodles and juicy chicken breast. Comforting, healthy, and perfect for quick dinners.

Ingredients

  • 2 boneless chicken breasts
  • 4 medium zucchinis, spiralized
  • 1 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • ¾ cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: pinch of nutmeg, fresh herbs, crushed red pepper

Instructions

  1. Spiralize zucchini and lay on paper towels. Salt lightly and let sit 10–15 minutes.
  2. Season chicken. Heat oil in skillet, cook chicken 4–5 mins per side. Remove and slice.
  3. In same pan, sauté garlic in butter. Add cream and simmer. Stir in cheese until melted.
  4. Add zoodles and toss gently. Return chicken and heat through.
  5. Serve immediately with more Parmesan and pepper.

  • Avoid overcooking zoodles.
  • Add spinach or mushrooms for extra nutrition.
  • Use dairy-free cream and cheese for vegan variation.
