Slow Cooker Chicken Stew is a hearty meal made with tender chicken, potatoes, carrots, and herbs slowly simmered in a savory broth. The slow cooking process allows the ingredients to blend into a comforting and satisfying stew.

pounds boneless chicken thighs or breasts
3 medium potatoes, chopped
2 carrots, sliced
2 celery stalks, chopped
1 small onion, diced
3 cloves garlic, minced
3 cups chicken broth
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf
¾ teaspoon salt
½ teaspoon black pepper
1 tablespoon cornstarch (optional)
2 tablespoons water (optional)

Instructions

1. Chop potatoes, carrots, celery, and onion.
2. Place vegetables into the slow cooker.
3. Season chicken with salt and pepper and place on top of vegetables.
4. Add garlic, thyme, parsley, and bay leaf.
5. Pour chicken broth over the ingredients.
6. Drizzle olive oil over the mixture.
7. Cover and cook on low for 6–7 hours or high for 3–4 hours.
8. Stir cornstarch mixed with water into the stew during the final 30 minutes if thicker broth is desired.
9. Remove bay leaf before serving and shred chicken slightly if desired.

Notes

Yukon Gold or red potatoes hold their shape best in slow cooker stews.
