High Protein Slow Cooker Garlic Butter Beef Bites are tender chunks of beef slowly cooked in a rich garlic butter sauce. The slow cooker transforms simple ingredients into a savory, protein-rich dinner with deep flavor and minimal hands-on cooking.
2 pounds beef chuck roast or stew meat, cut into bite-size cubes
3 tablespoons butter
1 tablespoon olive oil
5 cloves garlic, minced
1 cup beef broth
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon cornstarch (optional)
2 tablespoons water (optional)
1. Cut beef into one-inch cubes and pat dry with paper towels.
2. Heat olive oil in a skillet over medium-high heat.
3. Brown the beef pieces for 2–3 minutes per side until lightly golden.
4. Transfer the browned beef into the slow cooker.
5. Melt butter in the skillet and stir in minced garlic for about 30 seconds.
6. Pour the garlic butter over the beef in the slow cooker.
7. Add beef broth, salt, pepper, and Italian seasoning. Stir gently.
8. Cover and cook on low for 6–7 hours or high for 3–4 hours.
9. If thicker sauce is desired, mix cornstarch and water and stir into the slow cooker during the final 30 minutes.
10. Serve warm with rice, mashed potatoes, or vegetables.
Browning the beef adds deeper flavor to the final dish. Chuck roast produces the most tender texture for slow cooking.
