Sugar Cookie Crust

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Cheesecake Filling

  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 1 tbsp vanilla extract
  • 3 large eggs, room temperature

Toppings (Optional)

  • Whipped cream
  • Sprinkles
  • Crushed sugar cookies

Instructions

  1. Preheat oven to 350°F. Line a 9” springform pan with parchment.
  2. Cream butter and sugar. Mix in yolk and vanilla. Add dry ingredients to form a dough.
  3. Press dough into the pan and bake 10–12 min. Cool completely.
  4. Lower oven to 325°F. Wrap pan in foil for water bath.
  5. Beat cream cheese until smooth. Add sugar, vanilla, sour cream, then eggs one at a time.
  6. Pour filling over crust. Place pan in water bath and bake 55–70 min until just set.
  7. Cool in oven 1 hour. Chill 4+ hours in fridge.
  8. Top with whipped cream and sprinkles before serving.

Notes

  • For bars, use a 9×13 pan and bake 35–40 min.
  • Chill overnight for best texture.
  • Use almond extract in crust for extra holiday flavor.
