Soft & Easy Butter Pecan Cookies are tender, buttery cookies with toasted pecans, offering a melt-in-your-mouth texture and rich nutty flavor.

Ingredients

1 cup unsalted butter, room temperature
3/4 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups pecans, toasted and chopped

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. Whisk together flour, baking soda, and salt; fold into wet mixture.
  5. Fold in toasted pecans.
  6. Scoop tablespoons of dough onto sheets and flatten slightly.
  7. Bake 12–14 minutes until edges are golden and centers soft.
  8. Cool 5 minutes on sheet, then transfer to wire rack.
  9. Store in airtight container up to 5 days.

Notes

Toast pecans for best flavor. Chill dough to prevent spreading. Optional chocolate chips or cinnamon can be added.
