A crisp, refreshing salad featuring broccoli, Honeycrisp apples, toasted almonds, and a creamy dressing. Perfect for lunch or as a side dish.

Ingredients

4 cups fresh broccoli florets
1 large Honeycrisp apple, diced
1/4 cup toasted almonds, chopped
1/4 cup dried cranberries
1/4 cup shredded carrot (optional)
1/4 cup red onion, finely chopped
1/2 cup mayonnaise
1/4 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Wash and cut broccoli into bite-sized florets. Blanch if desired.
  2. Dice Honeycrisp apple and toss with lemon juice.
  3. Toast almonds in a dry skillet until lightly golden.
  4. Whisk together mayonnaise, Greek yogurt, honey, lemon juice, salt, and pepper.
  5. Combine broccoli, apple, almonds, cranberries, carrot, and onion in a large bowl.
  6. Pour dressing over salad and toss gently.
  7. Refrigerate 20–30 minutes before serving.

Notes

Adjust dressing to taste. Serve chilled.
