Creamy mashed potato pie baked with butter, onions, and cheese until golden and comforting.

Ingredients

2 pounds potatoes, peeled and cubed
4 tablespoons butter
1/2 cup warm milk or cream
1 onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded sharp cheddar cheese
1 egg, lightly beaten (optional)
Extra cheese or butter for topping

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Boil potatoes 15–20 minutes until tender, then drain.
  3. Sauté onion in butter until soft.
  4. Mash potatoes and mix with butter, warm milk, salt, and pepper.
  5. Stir in egg, cheese, and sautéed onions.
  6. Spread mixture in baking dish and smooth top.
  7. Sprinkle with extra cheese or dot with butter.
  8. Bake 30–35 minutes until golden.
  9. Let rest briefly before serving.

Notes

Drain potatoes thoroughly for best texture. Warm milk before adding. Broil briefly for a more golden top if desired.
