Juicy Air Fryer Chicken Breast with crisp-tender mixed vegetables, all made in one basket. A healthy, protein-packed meal ready in under 30 minutes.

Ingredients

2 boneless, skinless chicken breasts
3 cups mixed vegetables (bell peppers, zucchini, broccoli, red onion)
2 tsp olive oil or avocado oil, divided
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp Italian seasoning
Salt and black pepper, to taste
Optional: lemon juice, chopped parsley, red pepper flakes

Instructions

  1. Preheat air fryer to 375°F for 3–5 minutes.
  2. Season chicken with oil, garlic powder, paprika, salt, pepper, and Italian seasoning.
  3. Chop vegetables and toss with oil, garlic powder, salt, and pepper.
  4. Place chicken in center of basket, surround with veggies.
  5. Air fry 10 minutes, flip chicken and stir veggies. Cook 8–10 minutes more.
  6. Rest chicken, slice, and serve over vegetables. Garnish with lemon juice or herbs.

Notes

Use oven-ready veggies for ease.
Swap in thighs for juicier results.
Serve with rice or cauliflower rice for a full meal.
