Juicy keto meatballs simmered in a creamy mushroom and sour cream sauce — a low-carb twist on classic stroganoff, perfect for Christmas or Thanksgiving dinner.

Ingredients

For the Meatballs:

  • 1 lb ground beef (or beef + pork mix)
  • 1 egg
  • ¼ cup almond flour
  • 2 garlic cloves, minced
  • 1 tsp onion powder
  • 1 tbsp parsley
  • Salt & pepper

For the Sauce:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1 tsp paprika
  • 1 cup beef broth
  • ¾ cup sour cream
  • Optional: ¼ cup heavy cream or 2 tbsp cream cheese
  • Salt & pepper
  • 1 tsp Worcestershire (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F. Mix meatball ingredients and shape into 1.5-inch balls.
  2. Bake 18–20 minutes until browned and cooked through.
  3. In a skillet, sauté mushrooms in butter and oil until golden. Add paprika, broth, and simmer.
  4. Stir in sour cream (and cream/cheese if using) over low heat. Don’t boil.
  5. Add meatballs to sauce and simmer 5–7 minutes. Garnish and serve.

Notes

Serve with cauliflower mash or greens. Make meatballs ahead and freeze. Perfect for keto holiday meals.
