Juicy, keto-friendly mini meatloaves stuffed with melty mozzarella and seasoned with Italian herbs. Ready in under 30 minutes for a cheesy, satisfying low-carb meal.

  • lbs ground beef (80/20)
  • 1 egg
  • ½ cup almond flour
  • ⅓ cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • 68 cubes of mozzarella (1″ each)
  • 2 tbsp sugar-free marinara or tomato paste (optional)

Instructions

  1. Preheat oven to 375°F. Line a baking sheet or muffin tin.
  2. In a large bowl, mix ground beef, egg, almond flour, Parmesan, and seasonings until just combined.
  3. Divide mixture into 6–8 parts. Flatten and stuff each with a mozzarella cube. Seal and shape into mini loaves.
  4. Place on tray or in muffin tin. Top with tomato paste or marinara if using.
  5. Bake for 22–25 minutes or until cooked through. Broil 2 minutes if desired.
  6. Rest 5 minutes and serve hot.

Notes

Great for meal prep or freezing. Use turkey or chicken with added fat for leaner versions. Air fryer method: 375°F for 15–18 minutes.
