Crispy, cheesy chicken quesadillas filled with seasoned meat and melty cheese—perfect for quick family dinners or party snacks.

Ingredients

1 lb chicken breasts or thighs (cooked and shredded)
4 large flour tortillas
2 cups shredded cheddar and mozzarella cheese
½ cup chopped onion (optional)
1 bell pepper, sliced (optional)
1 tsp cumin
½ tsp paprika
½ tsp garlic powder
Salt and pepper to taste
Butter or oil for cooking

Instructions

  1. Cook and season chicken, then shred.
  2. Sauté onion and peppers until soft (optional).
  3. Layer chicken, veggies, and cheese on half of each tortilla. Fold in half.
  4. Butter outside and cook in skillet over medium heat, 2–3 minutes per side until golden.
  5. Slice into wedges and serve warm.

Notes

Use rotisserie chicken for faster prep. Add beans or corn for variation. Serve with salsa or guacamole.
