Lemon Crinkle Cookies – Herbs & Flour are soft, chewy cookies bursting with fresh lemon flavor and coated in powdered sugar for a classic crackled finish.

Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1/2 cup powdered sugar for coating
Optional 1 teaspoon finely chopped fresh thyme

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line baking sheets.
  2. Cream butter and sugar until fluffy.
  3. Add eggs, lemon zest, lemon juice, and vanilla.
  4. Whisk flour and baking powder separately.
  5. Combine dry ingredients with wet mixture.
  6. Chill dough 30 minutes if needed.
  7. Roll dough into balls and coat in powdered sugar.
  8. Bake 10 to 12 minutes until edges set.
  9. Cool before serving.
