Thinly sliced cucumbers layered with creamy herbed cream cheese on soft bread for a classic, elegant, and refreshing sandwich.

Ingredients

8 slices white or whole wheat sandwich bread
1 medium cucumber, thinly sliced
4 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon fresh dill, chopped
1 teaspoon chives, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice (optional)

Instructions

  1. Slice cucumber thinly and pat dry.
  2. Mix cream cheese, butter, dill, chives, salt, pepper, and lemon juice until smooth.
  3. Remove crusts from bread and spread cream cheese mixture on each slice.
  4. Layer cucumber slices over half the bread slices. Top with remaining bread, spread side down.
  5. Press gently and cut into quarters, triangles, or fingers. Chill 10–15 minutes before serving.

Notes

Add radishes or avocado for variation. Use soft cheeses like goat cheese for a different flavor. Assemble shortly before serving to prevent sogginess.
