Slow Cooker Maple Brown Sugar Glazed Carrots are tender carrot slices coated in a smooth maple and brown sugar glaze, slowly cooked until perfectly soft and evenly flavored.

2 pounds carrots, peeled and sliced into 1/2-inch rounds
1/3 cup pure maple syrup
1/3 cup packed brown sugar
4 tablespoons unsalted butter, cut into pieces
1/4 teaspoon salt
1/4 teaspoon ground cinnamon (optional)
1/2 teaspoon vanilla extract (optional)

Instructions

  1. Peel and slice carrots into even 1/2-inch rounds.
  2. Place carrots evenly into the slow cooker.
  3. In a bowl, mix maple syrup, brown sugar, salt, cinnamon, and vanilla until combined.
  4. Pour the mixture over the carrots.
  5. Add butter pieces on top.
  6. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours.
  7. Stir gently before serving to coat carrots in glaze.

Notes

For a thicker glaze, remove the lid near the end of cooking to allow excess liquid to reduce. Adjust seasoning lightly before serving if needed.
