Tender chicken, sun-dried tomatoes, and Parmesan tossed in a creamy herb sauce with pasta. A romantic, one-pan meal with bold flavor and a touch of spice

Ingredients

  • 12 oz pasta (penne or rigatoni)
  • lbs chicken breasts, thinly sliced
  • ½ tsp salt + ½ tsp pepper
  • ½ tsp paprika
  • 2 tbsp olive oil + butter
  • ½ small onion, diced
  • 3 garlic cloves, minced
  • ⅓ cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan, grated
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water.
  2. Season chicken with salt, pepper, and paprika. Sear in butter/oil until golden. Set aside.
  3. Sauté onion, garlic, and sun-dried tomatoes until fragrant.
  4. Add broth, cream, Parmesan, and seasonings. Simmer until slightly thick.
  5. Add pasta and chicken. Toss to coat. Add pasta water if needed.
  6. Garnish with basil or parsley. Serve hot with extra cheese.

Notes

  • Use freshly grated Parmesan for best texture.
  • Add sautéed spinach or mushrooms for a twist.
  • Store leftovers in fridge up to 4 days.
