This Marry Me Chicken Pasta is a creamy, flavor-packed dish made with sun-dried tomatoes, garlic, Parmesan, and juicy seared chicken in under 30 minutes.
8 oz pasta (penne or rigatoni)
2 chicken breasts, pounded
1 tbsp olive oil + 1 tbsp butter
Salt, pepper, 1 tsp Italian seasoning
3 garlic cloves, minced
½ cup sun-dried tomatoes (in oil), chopped
¾ cup chicken broth
1 cup heavy cream
½ cup Parmesan cheese, grated
¼ tsp red pepper flakes (optional)
Fresh basil or parsley to finish
Reserved pasta water
Cook pasta until al dente. Reserve 1 cup water, then drain.
Season chicken and sear in oil + butter until golden. Remove and slice.
In same skillet, sauté garlic. Add sun-dried tomatoes.
Deglaze with broth, then add cream and cheese. Simmer until thick.
Add pasta, chicken, and toss. Use pasta water as needed to loosen.
Garnish with basil and serve hot.
Swap shrimp or plant-based chicken if preferred. Add spinach or mushrooms for extra veg.
